One of the first things that returning riders mention is how much they enjoyed the fresh, healthy home-made meals, and how they’d love to try them at home. Well, with a bit of persuasion we’ve managed to convince our Yukon hosts to lift the lid on a couple of their secret recipes, to bring a bit of the Yukon to your own kitchen!

Chilli-lime Arctic Char

Ingredients

7 medium garlic cloves, minced 2 tsp. sea salt
¼ cup fresh lime juice and zest of lime
2 tbsp. olive oil
2 tsp. sugar
2 tsp. ground chipotle chile
1 de-boned char, both sides, leave skin on (if you don’t have access to char you can substitute it with fresh wild salmon)

  • Mince garlic with salt, stir together; garlic paste, lime juice, oil, sugar and chipotle chilli in a small bowl until sugar is dissolved.
  • Put char in a plastic bowl with the skin side down. Rub in the chilli mixture and let sit for 15 minutes at cool room temperature.
  • Grill skin side down until just done. Enjoy with a nice cold beer or glass of wine!

Carol’s Famous Granola

Ingredients

14 cups large coarse rolled oats
2 cups wheat germ
1 cup sesame seeds
1 cup shelled sunflower seeds
2 cups unsweetened coconut flakes ½ cup brown sugar
1 tsp. salt
1 tbsp. cinnamon
1 cup honey
1 cup hot water
1 cup cooking oil
1 tsp. vanilla
2 cups coarsely chopped whole almonds
2 cups raisins/cranberry-raisin mixture

  • Stir the combined liquid ingredients into the combined dry ingredients.
  • Mix thoroughly with hands.
  • Place in roasting pan at 160 degrees stirring every 15 minutes for 1 -1 ½ hours.
  • Cool and store in airtight plastic containers. Zip lock bags are the best.
